Asian Style Ground Beef Lettuce Wraps

Ingredients
  

Sauce ingredients
  • 0.25 cup maple syrup (brown sugar, or coconut sugar)
  • 0.25 cup coconut aminos (tamari, or soy sauce)
  • 2 tsp rice vinegar
  • 1 tbsp toasted sesame oil
  • 0.25 tsp red pepper flakes (optional)
  • 2 tsp arrowroot powder (or cornstarch)
Main ingredients
  • 1 tbsp olive oil
  • 1 lb ground beef
  • 2 cloves garlic (minced)
  • 2 tsp grated fresh ginger
  • 1 medium red bell pepper (finely diced)
  • 0.5 cup shredded carrots
  • 4 whole green onions (sliced into 1” pieces)
  • to taste kosher salt
  • to taste ground pepper
  • to taste sesame seeds (for garnish)

  • optional steamed white rice or sauteed cauliflower rice (for serving)

Method
 

  1. Combine maple syrup, coconut aminos, rice vinegar, sesame oil, red pepper flakes, and arrowroot powder; whisk until smooth.
  2. Heat olive oil in a skillet over medium-high heat; cook ground beef until no longer pink, about 5 minutes.
  3. Add garlic and ginger; cook until fragrant, 1-2 minutes.
  4. Add bell pepper and carrots; cook until tender, 3-4 minutes. Pour sauce over; simmer 2-3 minutes until thickened. Season with salt and pepper.
  5. Stir in green onions, then serve filling in lettuce wraps, garnished with sesame seeds. Optional rice on the side.

Notes

Adjust seasoning to taste and serve immediately for best flavor.
