Ingredients

  • 1 pound boneless, skinless chicken breasts
Broth & Dairy
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup milk
Gnocchi & Vegetables
  • 1 package potato gnocchi
  • 1 cup fresh spinach, chopped
  • 1/2 cup carrots, finely grated
  • 1/2 cup celery, diced
  • 1/2 onion finely chopped onion
  • 2 cloves garlic, minced

Method
 

  1. Cook chicken breasts until no longer pink, then shred.
  2. Sauté onions, garlic, carrots, and celery until tender.
  3. Add broth, cream, and milk; simmer. Stir in gnocchi and cook.
  4. Mix in shredded chicken and spinach; simmer briefly.
  5. Season to taste and serve hot, garnished with Parmesan and parsley.

Notes

For extra flavor, add herbs like thyme or parsley during cooking.
