Chinese Beef and Broccoli (牛肉炒西兰花)

Ingredients
  

Meat
  • 1 lb flank steak (or skirt steak, or other cut) see footnote 1
  • 1 tablespoon soy sauce
  • 1 tablespoon peanut oil (or vegetable oil)
  • 1 tablespoon cornstarch
  • 1/2 teaspoon baking soda (optional) see footnote 1
  • 1/2 cup chicken stock (or beef stock)
  • 2 tablespoons shaoxing grape juice + vinegar (or dry sherry)
  • 1 teaspoon dark soy sauce see footnote 2
  • 2 teaspoons brown sugar (or white sugar)
  • 1 head broccoli cut into bite-size florets
  • 3 cloves garlic, minced
  • 2 teaspoons ginger, minced

Method
 

  1. Slice beef against the grain into 0.5 cm slices, marinate with soy sauce, oil, and cornstarch for 10 minutes.
  2. Mix sauce ingredients in a bowl; set aside.
  3. Steam broccoli with water until tender, then set aside.
  4. Cook beef in hot oil until browned, then add garlic and ginger; stir briefly.
  5. Add broccoli back to pan, pour in sauce, cook until thickened, then serve hot.

Notes

For best results, slice beef thinly against the grain and do not overcook the broccoli.
