Meat
  • 1 pound flank steak
  • 0.25 cup fresh lime juice about 2 limes
  • 0.25 cup olive oil
  • 0.25 cup fresh cilantro, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup cooked rice white or brown
  • 1 can black beans rinsed and drained
  • 1 cup corn fresh, frozen, or canned
  • 1 cup cherry tomatoes, halved
  • 1 avocado sliced
  • 0.5 cup red onion, diced
  • 0.5 cup feta cheese, crumbled optional
Garnishes
  • extra cilantro for garnish

Method
 

  1. Whisk lime juice, olive oil, cilantro, garlic, cumin, chili powder, salt, and pepper. Marinate steak 30 min to 4 hrs, then grill 4-5 min per side. Rest and slice thinly. Assemble bowls with rice, beans, corn, tomatoes, avocado, onion, steak, and feta. Garnish with cilantro and lime wedges.

Notes

Use fresh cilantro for best flavor and adjust toppings to taste.
