Ingredients

  • 1 tablespoon olive oil
vegetables
  • 1 medium onion, chopped
  • 2 carrots carrots, sliced
  • 2 celery stalks celery, sliced
garlic
  • 3 cloves garlic, minced
broth
  • 8 cups chicken broth
chicken
  • 2 cups cooked chicken, shredded
spices
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • to taste Salt and pepper
noodles
  • 2 cups egg noodles
bay leaf
  • 1 bay leaf bay leaf

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion, carrots, and celery until tender, about 5-7 minutes.
  3. Add garlic and cook for 1 minute.
  4. Pour in broth, add chicken, thyme, parsley, bay leaf, salt, and pepper; bring to a boil, then simmer 15 minutes.
  5. Add noodles and cook until tender, about 8-10 minutes. Remove bay leaf and serve.

Notes

Use low-sodium broth for a healthier option.
