- Heat olive oil in a large pot over medium heat.
- Sauté onion, carrots, and celery until tender, about 5-7 minutes.

- Pour in broth, add chicken, thyme, parsley, bay leaf, salt, and pepper; bring to a boil, then simmer 15 minutes.
- Add noodles and cook until tender, about 8-10 minutes. Remove bay leaf and serve.
