Ingredients
  

Protein
  • 1 pound boneless, skinless chicken breasts
Broth
  • 4 cups low-sodium chicken broth
Vegetables
  • 2 cups carrots, diced
  • 2 cups celery, diced
  • 1 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • to taste Salt and pepper
Additional vegetables
  • 2 cups green beans, trimmed and cut into pieces
  • 1 cup corn (frozen or fresh)
Garnish
  • to taste Fresh parsley for garnish

Method
 

  1. Add chicken breasts and broth to the slow cooker.
  2. Stir in carrots, celery, onion, garlic, thyme, rosemary, salt, and pepper.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours, until chicken is cooked.
  4. Remove chicken, shred, and return to the slow cooker.
  5. Add green beans and corn, cook for 30 minutes, then serve garnished with parsley.
