Ingredients
  

Vegetables
  • 2 heads garlic roasted
  • 2 tablespoons olive oil
  • 1 piece onion chopped
  • 1 piece carrot chopped
  • 1 stalk celery chopped
  • 1 can crushed tomatoes 28 ounces
  • 1 cup vegetable or chicken broth
  • 1 teaspoon dried basil
  • ½ teaspoon sugar
  • to taste Salt and pepper
  • ½ cup heavy cream or coconut cream
Garnish
  • as needed Fresh basil for garnish

Method
 

  1. Preheat oven to 400°F (200°C). Roast garlic wrapped in foil for 30-35 minutes.
  2. Sauté chopped onion, carrot, and celery in olive oil until softened, about 5 minutes.
  3. Add crushed tomatoes, broth, basil, and sugar. Squeeze roasted garlic into the pot and stir.
  4. Simmer for 10-15 minutes, then blend until smooth. Stir in cream and heat through.
  5. Adjust seasoning, serve hot, garnished with fresh basil.

Notes

For a vegan version, use coconut cream and vegetable broth.
