Method
- Preheat oven to 400°F (200°C). Roast garlic wrapped in foil for 30-35 minutes.
- Sauté chopped onion, carrot, and celery in olive oil until softened, about 5 minutes.
- Add crushed tomatoes, broth, basil, and sugar. Squeeze roasted garlic into the pot and stir.
- Simmer for 10-15 minutes, then blend until smooth. Stir in cream and heat through.
- Adjust seasoning, serve hot, garnished with fresh basil.
Notes
For a vegan version, use coconut cream and vegetable broth.
