Ingredients
  

Pasta
  • 8 oz pasta (fettuccine or spaghetti)
  • 2 tablespoons olive oil
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup baby spinach
  • 1 lb salmon fillet, skin removed
  • to taste salt and pepper
  • 2 tablespoons fresh dill or parsley, chopped
  • grated parmesan cheese for serving

Method
 

  1. Cook pasta in salted boiling water until al dente; drain and set aside.
  2. Season salmon with salt and pepper; cook in a skillet with 1 tbsp olive oil for 4-5 minutes per side until flaky. Remove and set aside.
  3. In the same skillet, add remaining olive oil, sauté garlic and cherry tomatoes for 2-3 minutes.
  4. Pour in heavy cream, simmer 2-3 minutes, then add spinach until wilted. Flake salmon and combine with sauce. Mix in cooked pasta, adding reserved pasta water if needed.
  5. Adjust seasoning, stir in dill or parsley, then serve topped with grated Parmesan cheese.

Notes

For extra flavor, add a squeeze of lemon before serving.
