Method
- Cook pasta in salted boiling water until al dente; drain and set aside.
- Season salmon with salt and pepper; cook in a skillet with 1 tbsp olive oil for 4-5 minutes per side until flaky. Remove and set aside.
- In the same skillet, add remaining olive oil, sauté garlic and cherry tomatoes for 2-3 minutes.
- Pour in heavy cream, simmer 2-3 minutes, then add spinach until wilted. Flake salmon and combine with sauce. Mix in cooked pasta, adding reserved pasta water if needed.
- Adjust seasoning, stir in dill or parsley, then serve topped with grated Parmesan cheese.
Notes
For extra flavor, add a squeeze of lemon before serving.
