  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano

  • 1 package (9 ounces) refrigerated cheese tortellini
  • 1 cup heavy cream
  • for garnish Fresh basil leaves for garnish

Method
 

  1. Heat olive oil in a large pot, sauté onion until translucent.
  2. Add garlic and cook for 1 minute, then stir in crushed tomatoes, broth, herbs, salt, and pepper. Simmer.
  3. Add tortellini and cook for 5-7 minutes until tender.
  4. Reduce heat, stir in heavy cream, and heat through. Serve garnished with basil.
