Method
- Heat olive oil in a large pot and sauté minced garlic until fragrant (about 1 minute).
- Add vegetable broth and Italian seasoning; simmer for 5 minutes.
- Reduce heat and stir in heavy cream until smooth.
- Add tortellini and cook for 3-5 minutes until tender.
- Stir in spinach until wilted, about 2 minutes, then serve topped with Parmesan cheese.
Notes
For a richer flavor, sprinkle extra Parmesan on top before serving.
