  • 9 oz cheese tortellini (fresh or frozen)
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 3 cloves garlic (minced)
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1 tbsp olive oil

Method
 

  1. Heat olive oil in a large pot and sauté minced garlic until fragrant (about 1 minute).
  2. Add vegetable broth and Italian seasoning; simmer for 5 minutes.
  3. Reduce heat and stir in heavy cream until smooth.
  4. Add tortellini and cook for 3-5 minutes until tender.
  5. Stir in spinach until wilted, about 2 minutes, then serve topped with Parmesan cheese.

Notes

For a richer flavor, sprinkle extra Parmesan on top before serving.
