Creamy Tortilla Soup

Ingredients
  

Vegetables and aromatics
  • 2 tbsp small onion (finely diced)
  • 3 cloves fresh garlic, minced
  • 1 tbsp tomato paste
Canned and frozen ingredients
  • 1 can corn (or 1-2 cups frozen corn)
  • 1 can rotel with green chilies
  • 1 can black beans
  • 1 can pinto beans
  • 6 cups chicken broth
  • 1 tsp cumin
  • 3 tbsp taco seasoning
  • 8 oz cream cheese
  • 1 1/2 cups shredded cheese (optional)
  • 1-2 chicken breasts chicken breasts (or rotisserie chicken) Use 1-2 breasts or rotisserie chicken
  • to taste Avocado
  • to taste Sour Cream
  • to serve Chips
  • 1 piece lime
  • to taste cheese
  • to taste green onions

Method
 

  1. Sauté diced onion in butter for 5 minutes, then add garlic and cook for a few more minutes.
  2. Add chicken, broth, rotel, tomato paste, cumin, and taco seasoning; boil until chicken is tender.
  3. Shred cooked chicken and return to the pot; add beans, corn, and cream cheese, stirring until melted.
  4. Heat through, then serve topped with cheese, sour cream, avocado, chips, and green onions.

Notes

For a quicker meal, use rotisserie chicken instead of cooking fresh.
