Method
- Sauté diced onion in butter for 5 minutes, then add garlic and cook for a few more minutes.
- Add chicken, broth, rotel, tomato paste, cumin, and taco seasoning; boil until chicken is tender.
- Shred cooked chicken and return to the pot; add beans, corn, and cream cheese, stirring until melted.
- Heat through, then serve topped with cheese, sour cream, avocado, chips, and green onions.
Notes
For a quicker meal, use rotisserie chicken instead of cooking fresh.
