  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can (14 oz) diced tomatoes, undrained
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • 1 bag (9 oz) fresh or frozen cheese ravioli
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • for garnish Fresh basil

Method
 

  1. Heat olive oil in a large pot, sauté diced onion until translucent, then add garlic and cook 1 minute.
  2. Pour in vegetable broth and diced tomatoes, add Italian seasoning, salt, and pepper; bring to a boil.
  3. Add ravioli and cook 3-5 minutes, then stir in spinach, heavy cream, and Parmesan; cook 2-3 minutes until heated through.
  4. Taste and adjust seasoning, then serve hot garnished with basil.

Notes

For a creamier texture, add more heavy cream or Parmesan cheese as desired.
