Ingredients
  

Salmon
  • 2 tablespoons olive oil
  • 4 ounces salmon fillets four fillets
  • 1 teaspoon kosher salt for the salmon (plus more)
  • 0.5 teaspoon black pepper plus more
  • 2 tablespoons butter
  • 6 cloves garlic smashed and minced
  • 18 ounces cherry tomatoes
  • 1 cup heavy cream
  • 1.5 teaspoons kosher salt for the sauce
  • 1 teaspoon dried basil
  • 0.25 teaspoon cayenne pepper
  • to taste black pepper
  • 0.5 cup parmesan cheese shredded
  • 3-4 ounces spinach chopped
  • 0.5 bunch fresh basil roughly chopped

Method
 

  1. Heat a skillet over medium high heat, sear the salmon 1-3 minutes per side, then remove and keep warm.
  2. In the same pan, melt butter, cook garlic for 1 minute, then add chopped and whole cherry tomatoes. Cook until tomatoes start to split.
  3. Pour in heavy cream, add salt, basil, cayenne, and black pepper. Simmer for 2-4 minutes until slightly thickened.
  4. Stir in Parmesan, spinach, and chopped basil. Return salmon to pan, heat through, then serve.

Notes

Serve with pasta, rice, or a green salad for a complete meal.
