Method
- Heat a skillet over medium high heat, sear the salmon 1-3 minutes per side, then remove and keep warm.
- In the same pan, melt butter, cook garlic for 1 minute, then add chopped and whole cherry tomatoes. Cook until tomatoes start to split.
- Pour in heavy cream, add salt, basil, cayenne, and black pepper. Simmer for 2-4 minutes until slightly thickened.
- Stir in Parmesan, spinach, and chopped basil. Return salmon to pan, heat through, then serve.
Notes
Serve with pasta, rice, or a green salad for a complete meal.
