  • 2 lbs boneless, skinless chicken thighs
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon paprika
  • to taste Salt and pepper
  • 1 cup broccoli florets (optional)
  • 0.5 cup diced bell peppers (optional)

Method
 

  1. Place chicken thighs in crockpot.
  2. Mix broth, cream, spices, salt, and pepper; pour over chicken.
  3. Add vegetables if using, then cook on low 6-8 hours.
  4. Shred chicken and stir in cheese until melted.
  5. Serve hot and enjoy!
