Ingredients
  

Broth and Canned Goods
  • 8 cups chicken stock
  • 2 14 oz diced tomato, drained
  • 1 lbs. chicken breasts
  • 1 lbs. ground beef
  • ½ head cabbage
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp black pepper or to taste
  • 1 tsp salt or to taste
Fresh Toppings
  • 1 each Avocado
  • 1 each Lime
  • 1 bunch Cilantro
  • Dollop sour cream
  • Shredded Mexican cheese

Method
 

  1. Season ground beef with salt and pepper, shape into 1 tbsp meatballs.
  2. Slice cabbage into small strips.
  3. Combine chicken, meatballs, tomatoes, cabbage, seasonings, and stock in slow cooker.
  4. Cook on low 7-8 hours or high 4-5 hours.
  5. Ladle into bowls and garnish with toppings.

Notes

Feel free to add more toppings for extra flavor.
