  • 1 cup arborio rice
  • 4 cups almond milk (or other dairy-free milk)
  • 0.5 cup coconut sugar (or sweetener of choice)
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon ground cinnamon
  • 0.25 teaspoon salt
  • 0.5 cup raisins (optional)
  • 0.25 cup shredded coconut (optional)
  • Fresh fruit or nuts for topping (optional)

Method
 

  1. Rinse the rice under cold water until clear.
  2. Combine rice, almond milk, coconut sugar, vanilla, cinnamon, and salt in the slow cooker.
  3. Add raisins and shredded coconut if desired, then stir.
  4. Cover and cook on low for 4-5 hours, stirring occasionally until tender and creamy.
  5. Adjust sweetness if needed, then serve warm with toppings.
