Ingredients
  

Protein
  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 cups water
Vegetables
  • 3 carrots carrots, sliced
  • 2 stalks celery stalks, chopped
  • 1 diced onion, diced
Aromatics & Herbs
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 bay leaf bay leaf
Seasonings
  • to taste Salt and pepper Salt and pepper
  • 2 cups egg noodles
  • 1 cup frozen peas

Method
 

  1. Place chicken breasts in crock pot with broth, water, vegetables, garlic, herbs, and seasonings.
  2. Cook on low for 6-8 hours or high for 3-4 hours, then shred the chicken.
  3. Return shredded chicken to the pot, add noodles and peas, and cook for 30 minutes until tender.
  4. Remove bay leaf before serving and enjoy your comforting soup!

Notes

For extra flavor, add fresh herbs or a squeeze of lemon before serving.
