  • 1/2 cucumber grated and squeezed dry
  • 1-2 cloves garlic minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh dill

Method
 

  1. Grate the cucumber using a box grater.
  2. Squeeze excess water from cucumber.
  3. Combine yogurt, cucumber, garlic, olive oil, and lemon juice in a bowl.
  4. Add the chopped fresh dill.
  5. Season with salt and pepper to taste.
  6. Stir all ingredients together.
  7. Refrigerate for at least 30 minutes.
  8. Stir before serving and adjust seasoning if needed.
  9. Serve chilled.

Notes

For a thicker tzatziki, use full-fat Greek yogurt and ensure the cucumber is thoroughly drained.
