Method
- Melt butter in a large pot over medium heat.
- Sauté onion and garlic until softened, about 3-4 minutes.
- Add ham, cook 2 minutes, then add potatoes, broth, thyme, salt, and pepper. Simmer 20 minutes until potatoes are tender.
- Stir in milk, heat through, add cheese if desired, and serve garnished with green onions.
Notes
For a creamier texture, blend part of the soup before serving.
