Ingredients
  

Main Ingredients
  • 4 cups diced potatoes
  • 1 unit onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 cup shredded cheddar cheese
  • 2 green onions sliced (for garnish)

Method
 

  1. Add all main ingredients to the crockpot and stir to combine.
  2. Cover and cook on low for 6-8 hours or high for 3-4 hours until potatoes are tender.
  3. Use a potato masher to mash some of the potatoes for creaminess.
  4. Stir in heavy cream and shredded cheddar cheese until melted and combined.
  5. Serve hot, garnished with sliced green onions.
