Method
- Rinse and dry the chicken, then mix olive oil and spices.
- Rub spice mixture all over the chicken, including under the skin and inside the cavity.
- Place lemon halves inside the cavity, then put the chicken in the crockpot breast side up.
- Cover and cook on low for 6-8 hours until internal temperature reaches 165°F (75°C).
- Remove the chicken, let rest briefly, then carve and garnish with herbs if desired.
