  • 1 whole whole chicken (about 4-5 lbs)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 whole lemon, halved

Method
 

  1. Rinse and dry the chicken, then mix olive oil and spices.
  2. Rub spice mixture all over the chicken, including under the skin and inside the cavity.
  3. Place lemon halves inside the cavity, then put the chicken in the crockpot breast side up.
  4. Cover and cook on low for 6-8 hours until internal temperature reaches 165°F (75°C).
  5. Remove the chicken, let rest briefly, then carve and garnish with herbs if desired.
