Ingredients
  

Meat
  • 1 lb ground beef
  • 1 medium onion, diced
  • 4 to 5 cloves garlic cloves
Sauces and Pastes
  • 1 jar (28–32 oz) pasta or spaghetti sauce
  • 1 can (14 oz) diced tomatoes
  • 2 tbsp tomato paste
Herbs and Spices
  • 1 tbsp dried basil
  • 1 tbsp dried oregano
  • 1 tbsp dried parsley
  • 1 bay leaf bay leaf
Broth and Pasta
  • 4 to 6 cups chicken stock
  • 8 lasagna noodles lasagna noodles, broken into small pieces
  • 1/2 cup heavy cream
  • 1 cup shredded mozzarella cheese

Method
 

  1. In a large pot, cook ground beef and diced onion until browned.
  2. Add garlic, tomato paste, sauce, diced tomatoes, herbs, and bay leaf; simmer for 15 minutes.
  3. Pour in chicken stock and bring to a boil.
  4. Add broken lasagna noodles and cook until tender, about 10 minutes.
  5. Stir in heavy cream and mozzarella cheese; cook until cheese melts.

Notes

For a richer flavor, let the soup simmer longer to develop deeper taste.
