Method
- Heat oil in a large pot. Add onion and cook 1 minute. Add garlic and carrots; cook 2-3 minutes.
- Add tomato paste, tomato sauce, lentils, and potatoes. Pour in 4 cups water. Add salt, pepper, thyme, and oregano. Cover and boil.
- Reduce heat and simmer 25-35 minutes until lentils and potatoes are tender. Taste and adjust seasoning. Serve warm.
