Ingredients
  

Vegetables and seasonings
  • 2 tbsp vegetable oil
  • 3 cloves garlic (minced)
  • 0.25 cup diced onion
  • 1 large carrot (large, 3-4 oz)
  • 2 tbsp tomato paste
  • 0.25 cup tomato sauce (optional)
  • 1.25 cups lentils mixed green, red split, black
  • 12 oz potatoes (bite-sized)
  • 2 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp thyme
  • 0.5 tsp oregano
  • 4-5 cups water

Method
 

  1. Heat oil in a large pot. Add onion and cook 1 minute. Add garlic and carrots; cook 2-3 minutes.
  2. Add tomato paste, tomato sauce, lentils, and potatoes. Pour in 4 cups water. Add salt, pepper, thyme, and oregano. Cover and boil.
  3. Reduce heat and simmer 25-35 minutes until lentils and potatoes are tender. Taste and adjust seasoning. Serve warm.
