EASY Miso Soup without Dashi

This simple miso soup is quick to prepare and perfect for a comforting, vegetarian-friendly meal without the need for dashi stock.

Ingredients
  

Broth
  • 2 cups water
  • 2 cups vegetable broth
Miso Paste
  • 2 tbsp miso paste (white or red, your choice!)
Tofu
  • 2 cups Soft Tofu (cubed - use as much as you like)
Green Onions
  • 2 tbsp green onions (very thinly sliced)
Nori
  • 1 sheet nori (dried seaweed, torn into small pieces, use your preference)
Mushrooms or Vegetables (optional)

Method
 

  1. In a pot, combine water and vegetable broth and bring to a gentle simmer.
  2. Whisk in the miso paste until fully dissolved.
  3. Add cubed tofu, sliced green onions, torn nori, and optional vegetables or mushrooms. Heat through for 2-3 minutes.
  4. Remove from heat and serve hot.

Notes

Use low-sodium miso for a healthier option.
