Easy Tomato Soup Recipe

Ingredients
  

Base
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 0.5 medium onion (chopped)
  • 1-2 cloves garlic (minced)
  • 2 tablespoons flour
  • 2 cups chicken broth (or veggie broth)
  • 1 28 ounce can fire-roasted diced tomatoes (with juices)
  • 1 28 ounce can fire-roasted crushed tomatoes
  • 0.25 teaspoon Italian seasoning (or to taste)
  • 1 tablespoon sugar
  • 1 cup heavy/whipping cream
  • to taste Salt & pepper
For serving
  • fresh basil tear into smaller pieces
  • freshly grated parmesan cheese (optional, to taste)

Method
 

  1. Heat olive oil and butter in a pot over medium heat. Sauté onion for 5-7 minutes.
  2. Add garlic and flour; cook for about a minute.
  3. Whisk in chicken broth until smooth. Add tomatoes, seasoning, sugar, and cream. Bring to a boil.
  4. Reduce heat and simmer uncovered for 8-10 minutes. Blend if desired for a smoother texture.
  5. Season with salt and pepper. Stir in basil if using. Serve topped with parmesan if desired.

Notes

For a creamier soup, blend more thoroughly or add extra cream.
