Method
- Heat olive oil and butter in a pot over medium heat. Sauté onion for 5-7 minutes.
- Add garlic and flour; cook for about a minute.
- Whisk in chicken broth until smooth. Add tomatoes, seasoning, sugar, and cream. Bring to a boil.
- Reduce heat and simmer uncovered for 8-10 minutes. Blend if desired for a smoother texture.
- Season with salt and pepper. Stir in basil if using. Serve topped with parmesan if desired.
Notes
For a creamier soup, blend more thoroughly or add extra cream.
