Ingredients
  

Protein
  • 1 pound boneless chicken breasts
Vegetables
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes, halved
Grains
  • 1 cup cooked quinoa
Cheese & Dressing
  • 1 cup shredded mozzarella cheese
  • 1/2 cup ranch dressing
Spices
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Place chicken in a baking dish, add vegetables, quinoa, and seasonings.
  3. Cover with foil and bake for 25 minutes.
  4. Remove foil, add cheese, and bake uncovered for 10-15 minutes until bubbly.
  5. Let cool briefly before serving.
