  • 1 cup almond flour
  • 1 cup cottage cheese full fat or low fat
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Everything bagel seasoning, sesame seeds, poppy seeds Optional

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, combine almond flour, cottage cheese, eggs, baking powder, and salt. Mix well until a smooth dough forms.
  3. Divide the dough into 4 equal portions.
  4. Shape each portion into a bagel.
  5. Place the bagels on the prepared baking sheet.
  6. Optional: Brush the bagels with a lightly beaten egg wash and sprinkle with everything bagel seasoning, sesame seeds, or poppy seeds.
  7. Bake for 20-25 minutes, or until golden brown.
  8. Let the bagels cool on a wire rack before slicing and serving.

Notes

For a crispier bagel, broil for the last 1-2 minutes, watching carefully to prevent burning.
