Method
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, combine almond flour, cottage cheese, eggs, baking powder, and salt. Mix well until a smooth dough forms.
- Divide the dough into 4 equal portions.
- Shape each portion into a bagel.
- Place the bagels on the prepared baking sheet.
- Optional: Brush the bagels with a lightly beaten egg wash and sprinkle with everything bagel seasoning, sesame seeds, or poppy seeds.
- Bake for 20-25 minutes, or until golden brown.
- Let the bagels cool on a wire rack before slicing and serving.
Notes
For a crispier bagel, broil for the last 1-2 minutes, watching carefully to prevent burning.
