  • 1 lb sirloin steak cut into bite-sized pieces
  • 1.5 lb baby potatoes diced
  • 3 tbsp butter divided
  • 1 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • to taste salt and pepper
  • 2 tbsp fresh parsley chopped, for garnish

Method
 

  1. Sauté potatoes in 1 tbsp butter and olive oil until golden and fork-tender, about 10-12 minutes. Remove and keep warm.
  2. In the same pan, sear steak bites in 1 tbsp butter for 2-3 minutes per side until browned. Remove and set aside.
  3. Add minced garlic to the pan, cook for 1 minute, then return steak and potatoes. Toss with garlic butter and sprinkle with parsley. Serve warm.

Notes

For extra flavor, let the steak rest for a few minutes before serving.
