Ingredients
  

Pasta
  • 225 g linguine or fettuccine
Meat
  • 300 g sirloin steak (or ribeye/new york strip)
Aromatics and fats
  • 4 cloves garlic, minced
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
Garnishes
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons grated parmesan (optional)
  • 1/2 cup reserved pasta water

Method
 

  1. Cook pasta in salted boiling water until al dente, then drain and reserve 1/2 cup water.
  2. Pat steak dry, season with salt and pepper, then sear in a hot skillet with olive oil for 3-4 minutes per side. Rest for 5 minutes.
  3. Melt butter in the same pan, add garlic and red pepper flakes, sauté until fragrant.
  4. Add cooked pasta to the pan, toss with garlic butter, adding reserved water to loosen sauce.
  5. Slice rested steak thinly, serve over pasta, garnish with parsley and Parmesan.

Notes

Use high-quality steak for best flavor. Adjust spice level with red pepper flakes.
