  • 1.5 cups gluten-free all-purpose flour blend with xanthan gum
  • 0.5 cup protein powder whey or plant-based
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 1 cup plain Greek yogurt non-fat or low-fat
  • 1 large egg
  • 1 tbsp honey or maple syrup
  • 1 tsp vanilla extract
  • 0.5 cup fresh or frozen blueberries
  • Optional Everything bagel seasoning for topping

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Whisk together flour, protein powder, baking powder, and salt.
  3. Combine Greek yogurt, egg, honey/maple syrup, and vanilla extract. Mix well.
  4. Add wet ingredients to dry ingredients and mix until just combined.
  5. Gently fold in the blueberries.
  6. Divide the dough into 4 equal portions.
  7. Shape each portion into a ball and poke a hole through the center.
  8. Place the bagels on the prepared baking sheet.
  9. Optional: Brush with egg white/milk and sprinkle with seasoning.
  10. Bake for 20-25 minutes, or until golden brown.
  11. Cool on the baking sheet before transferring to a wire rack.
  12. Enjoy!

Notes

For a sweeter bagel, add a bit more honey or maple syrup. You can also experiment with different types of protein powder to find your favorite flavor.
