Ingredients
  

oil
  • 1 tbsp oil (for frying)
vegetables
  • 1 onion onion (finely diced)
  • 3 cloves garlic cloves (chopped)
  • 1 small piece ginger (chopped)
  • 2 carrots carrots (diced)
spices
  • 1 tbsp yellow curry powder
  • 0.5 tsp turmeric
  • 1 tsp chili powder (or paprika to taste)
lentils
  • 1 cup yellow lentils (or red lentils)
liquids
  • 3 cups vegetable broth
  • 0.75 cup coconut milk
sauces
  • 2 tbsp tamari or soy sauce (or coconut aminos)
seasonings
  • to taste salt and pepper
garnishes and accompaniments
  • parsley or coriander
  • sesame seeds
  • limes or lemons
  • flatbread (or naan or rice)

Method
 

  1. Heat oil in a large pot and sauté diced onion, garlic, and ginger until fragrant.
  2. Add diced carrots and spices; cook for 2-3 minutes.
  3. Stir in lentils, vegetable broth, and coconut milk; bring to a boil.
  4. Reduce heat and simmer for 20-25 minutes until lentils are tender.
  5. Season with soy sauce, salt, and pepper; garnish with herbs and seeds. Serve with lime and flatbread.
