  • 2 cups diced tomatoes
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 1 cup chopped green beans
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • to taste Salt and pepper
  • 1 cup small pasta (like ditalini or elbow)
  • Fresh parsley for garnish

Method
 

  1. Heat olive oil in a large pot, sauté onions, carrots, and celery until softened.
  2. Add tomatoes, green beans, kidney beans, broth, oregano, basil, salt, and pepper; bring to a boil.
  3. Reduce heat and simmer for 30 minutes, stirring occasionally.
  4. Add pasta and cook for 10-12 minutes until al dente.
  5. Adjust seasoning, serve hot, garnished with parsley.
