  • 1 pound lean chicken breast
Vegetables
  • 2 cups chopped kale
  • 1 cup diced carrots
  • 1 cup diced celery
Canned Goods
  • 1 can (15 oz) low-sodium diced tomatoes
  • 1 cup low-sodium chicken broth
Spices & Seasonings
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme

Method
 

  1. Place chicken in crock pot.
  2. Add vegetables and pour in tomatoes and broth.
  3. Add garlic, oregano, thyme, salt, and pepper.
  4. Cook on low for 6-8 hours or high for 3-4 hours.
