  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 cup plain Greek yogurt (non-fat or low-fat)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup milk (any kind)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • pinch nutmeg Optional
  • chopped fresh parsley Optional for garnish

Method
 

  1. Heat olive oil in a saucepan over medium heat.
  2. Add garlic and cook for 1 minute, or until fragrant, being careful not to burn it.
  3. Reduce heat to low. Stir in Greek yogurt, Parmesan cheese, and milk.
  4. Whisk constantly until the cheese is melted and the sauce is smooth.
  5. Stir in salt, pepper, and nutmeg (if using).
  6. Taste and adjust seasonings as needed.
  7. Serve immediately over your favorite pasta. Garnish with fresh parsley, if desired.

Notes

For a richer flavor, use whole milk Greek yogurt and add a touch of butter.
