- Heat olive oil in a saucepan over medium heat.
- Add garlic and cook for 1 minute, or until fragrant, being careful not to burn it.
- Reduce heat to low. Stir in Greek yogurt, Parmesan cheese, and milk.
- Whisk constantly until the cheese is melted and the sauce is smooth.
- Stir in salt, pepper, and nutmeg (if using).
- Taste and adjust seasonings as needed.
- Serve immediately over your favorite pasta. Garnish with fresh parsley, if desired.
Notes
For a richer flavor, use whole milk Greek yogurt and add a touch of butter.
