Ingredients
  

Meat
  • 375 grams italian sausage meat (without casings, mild or spicy) approximately ¾ lb
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 3 cups chicken broth (low sodium)
  • 1.5 lbs russet or gold potatoes about 4 medium, peeled and cubed
  • ¾ teaspoon salt
  • ¼ teaspoon black pepper
  • a pinch red pepper flakes optional, for extra heat
  • ¾ cup cream (10-30% fat)
  • 2 cups kale roughly chopped
  • ¼ cup grated parmesan cheese

Method
 

  1. Cook the sausage in a skillet until browned, then transfer to the slow cooker.
  2. Add chopped onion and minced garlic to the skillet, cook until fragrant, then add to the slow cooker.
  3. Add potatoes, chicken broth, salt, pepper, and red pepper flakes to the slow cooker. Cook on low for 4 hours.
  4. Stir in cream and chopped kale, cook for an additional 30 minutes until kale is tender.
  5. Serve hot, topped with grated parmesan cheese.

Notes

For a spicier version, add more red pepper flakes or spicy sausage.
