  • 4 pieces boneless, skinless chicken breasts
Sauce
  • 1/2 cup hot honey
  • 4 cloves fresh garlic, minced
  • 2 tbsp olive oil
  • to taste salt and pepper
Base
  • 2 cups cooked rice or quinoa
Vegetables
  • 2 cups mixed vegetables (bell peppers, broccoli, snap peas)
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp fresh lime juice

Method
 

  1. Gather ingredients and chop vegetables.
  2. Pat chicken dry, season with salt and pepper.
  3. Heat olive oil in a skillet and sear chicken 5-6 minutes per side until cooked.
  4. Mix hot honey, soy sauce, and lime juice; add to the pan.
  5. Add vegetables and cook until tender-crisp, then serve over rice or quinoa with sauce.

Notes

For extra flavor, marinate chicken in the sauce for 30 minutes before cooking.
