Instant Pot Potato Soup

Ingredients
  

Vegetables and Broth
  • 4 large potatoes, peeled and diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup milk (or heavy cream)
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
Optional toppings
  • shredded cheese, chopped green onions, turkey bacon bits as desired

Method
 

  1. Add potatoes, onion, garlic, broth, salt, pepper, and paprika to the Instant Pot.
  2. Seal lid and cook on 'Manual' high pressure for 10 minutes.
  3. Quick release pressure, then stir in milk and butter.
  4. Blend with an immersion blender or mash to desired consistency.
  5. Taste and adjust seasoning, then serve topped with optional toppings.

Notes

For a creamier soup, use heavy cream instead of milk.
