Method
- Heat olive oil in a large pot over medium heat. Add carrots, onion, garlic, and celery; cook until vegetables are tender.
- Pour in broth, add salt, pepper, and Parmesan rind if using. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add pastina and cook until al dente, about 8 minutes. Stir in lemon juice to taste.
- Remove Parmesan rind, serve hot with Parmesan cheese and parsley garnish if desired.
