Method
- Sauté sausage in a large pot until browned, then remove and set aside.
- Cook onion and celery in the same pot for 4-5 minutes, then add flour and garlic, cooking for 1 minute.
- Gradually stir in chicken broth, add tomatoes, Italian seasoning, and sausage. Bring to a boil.
- Add tortellini, simmer for 5 minutes, then stir in cream and cook for another 5 minutes. Finish with spinach and season to taste.
Notes
For a richer flavor, use spicy Italian sausage or add red pepper flakes.
