Ingredients
  

Meat
  • 16 ounces Italian sausage see note
  • 0.5 medium onion chopped finely
  • 2 sticks celery chopped finely
  • 2 tablespoons flour
  • 3-4 cloves garlic minced
  • 4 cups chicken broth
  • 1 28 ounce can diced tomatoes with juices
  • 0.25 teaspoon Italian seasoning
  • 2 cups refrigerated cheese tortellini generous
  • 1 cup heavy/whipping cream
  • 2 cups fresh baby spinach optional
Seasoning
  • to taste Salt & pepper

Method
 

  1. Sauté sausage in a large pot until browned, then remove and set aside.
  2. Cook onion and celery in the same pot for 4-5 minutes, then add flour and garlic, cooking for 1 minute.
  3. Gradually stir in chicken broth, add tomatoes, Italian seasoning, and sausage. Bring to a boil.
  4. Add tortellini, simmer for 5 minutes, then stir in cream and cook for another 5 minutes. Finish with spinach and season to taste.

Notes

For a richer flavor, use spicy Italian sausage or add red pepper flakes.
