Ingredients
  

Meat
  • 2 pieces ribeye steaks (about 1 inch thick)
Cooking Oils & Fats
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
Garlic & Herbs
  • 2 cloves garlic cloves, smashed
  • 2 sprigs fresh rosemary or thyme
Dairy & Condiments
  • 1 cup heavy cream
  • 1/4 cup parmesan cheese, grated
  • 1 teaspoon dijon mustard
  • 1/4 teaspoon smoked paprika (optional)
Seasonings
  • to taste salt and black pepper

Method
 

  1. Pat steaks dry, season with salt and pepper. Sear in hot skillet with olive oil 3-4 mins per side.
  2. Add butter, smashed garlic, and herbs; spoon butter over steaks. Rest for 5-7 mins.
  3. Melt butter in same skillet, sauté garlic 1 min. Add cream, simmer, then stir in cheese, mustard, paprika, salt, and pepper until smooth.
  4. Slice steaks against the grain, top with sauce, and serve.

Notes

Use high-quality beef for best flavor. Rest steaks before slicing for juiciness.
