Method
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Blend cottage cheese and eggs until smooth.
- Combine almond flour, psyllium husk powder, baking powder, and salt.
- Add wet ingredients to dry ingredients and mix well until a dough forms.
- Divide the dough into 4 equal portions.
- Shape each portion into a bagel.
- Place the bagels on the prepared baking sheet.
- Brush with egg wash and sprinkle with everything bagel seasoning, if desired.
- Bake for 25-30 minutes, or until golden brown.
- Let cool completely on a wire rack before slicing and serving.
Notes
For a crispier bagel, broil for the last 1-2 minutes, watching carefully to prevent burning.
