  • 1 cup cottage cheese, full fat
  • 2 large eggs
  • 1 cup almond flour, blanched
  • 2 tablespoons psyllium husk powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • Everything bagel seasoning (optional)

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Blend cottage cheese and eggs until smooth.
  3. Combine almond flour, psyllium husk powder, baking powder, and salt.
  4. Add wet ingredients to dry ingredients and mix well until a dough forms.
  5. Divide the dough into 4 equal portions.
  6. Shape each portion into a bagel.
  7. Place the bagels on the prepared baking sheet.
  8. Brush with egg wash and sprinkle with everything bagel seasoning, if desired.
  9. Bake for 25-30 minutes, or until golden brown.
  10. Let cool completely on a wire rack before slicing and serving.

Notes

For a crispier bagel, broil for the last 1-2 minutes, watching carefully to prevent burning.
