Ingredients
  

Dried Lentils
  • 1 cup dried lentils, rinsed
Vegetables
  • 1 piece onion, chopped
  • 2 pieces carrots, peeled and diced
  • 2 stalks celery stalks, chopped
Garlic
  • 2 cloves garlic, minced
Spices and Broth
  • 1 bay leaf bay leaf
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 6 cups vegetable broth
Other
  • 1 tablespoon olive oil
  • to taste Salt and pepper
  • for garnish Fresh parsley

Method
 

  1. Heat olive oil, sauté onions, carrots, and celery until softened.
  2. Add garlic and cook briefly.
  3. Stir in spices, then add lentils, broth, and bay leaf. Bring to boil.
  4. Simmer uncovered for 30-40 minutes until lentils are tender.
  5. Remove bay leaf, season with salt and pepper, garnish with parsley.

Notes

For extra flavor, add a squeeze of lemon before serving.
