Method
- Heat olive oil, sauté onions, carrots, and celery until softened.
- Add garlic and cook briefly.
- Stir in spices, then add lentils, broth, and bay leaf. Bring to boil.
- Simmer uncovered for 30-40 minutes until lentils are tender.
- Remove bay leaf, season with salt and pepper, garnish with parsley.
Notes
For extra flavor, add a squeeze of lemon before serving.
