Ingredients
  

Meat
  • 1 pound ground beef (or turkey)
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 egg egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 jar low carb marinara sauce (about 24 oz)

Method
 

  1. Combine ground beef, almond flour, Parmesan, parsley, egg, garlic, Italian seasoning, salt, and pepper.
  2. Form mixture into 1-inch meatballs and place in slow cooker.
  3. Pour marinara sauce over meatballs, ensuring they are coated.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Serve hot, garnished with parsley if desired.

Notes

Using lean ground beef keeps the dish low in fat; feel free to add herbs for extra flavor.
