Ingredients
  

olive oil
  • 2 tablespoons olive oil
vegetables
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 3 medium carrots sliced
  • 2 stalks celery sliced
spices
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 0.5 teaspoon red pepper flakes optional
liquids
  • 6 cups chicken broth
  • 2 cups cooked shredded chicken
  • 1 cup heavy cream
  • 1 cup frozen peas
seasoning
  • to taste salt and pepper
garnish
  • for garnish fresh parsley chopped

Method
 

  1. Heat olive oil in a large pot over medium heat. Sauté onion until translucent, about 5 minutes.
  2. Add garlic, carrots, and celery; cook for 5 minutes until vegetables soften.
  3. Stir in thyme, oregano, red pepper flakes; cook 1 minute until fragrant.
  4. Pour in chicken broth, bring to boil, then simmer 10 minutes. Add chicken and cream; cook 5 minutes.
  5. Add peas, season with salt and pepper; cook 2-3 minutes. Serve garnished with parsley.

Notes

For a richer flavor, use homemade chicken broth if available.
