- Heat olive oil in a large pot over medium heat. Sauté onion until translucent, about 5 minutes.
- Add garlic, carrots, and celery; cook for 5 minutes until vegetables soften.
- Stir in thyme, oregano, red pepper flakes; cook 1 minute until fragrant.
- Pour in chicken broth, bring to boil, then simmer 10 minutes. Add chicken and cream; cook 5 minutes.
- Add peas, season with salt and pepper; cook 2-3 minutes. Serve garnished with parsley.
Notes
For a richer flavor, use homemade chicken broth if available.
