  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 carrots diced carrots
  • 2 stalks celery, diced
  • 1 diced zucchini
  • 1 yellow squash diced yellow squash
  • 1 cup green beans, chopped
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 can (15 oz) cannellini or kidney beans, drained and rinsed
  • 1 cup small pasta (like ditalini or elbow)
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • to taste salt and pepper Salt and pepper

  • to taste fresh parsley, chopped fresh parsley

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté onion, garlic, carrots, and celery for 5 minutes until translucent.
  3. Add zucchini and yellow squash; cook for 3–5 minutes. Stir in green beans, tomatoes, broth, oregano, basil, salt, and pepper. Bring to a boil.
  4. Add beans and pasta; simmer for 10–15 minutes until pasta is tender. Adjust seasoning as needed.
  5. Serve hot, garnished with parsley and Parmesan if desired.
