Miso Soup

A comforting Japanese classic, this miso soup is quick to prepare and full of umami flavor.

Ingredients
  

Broth
  • 4 cups dashi stock or water
Miso paste
  • 3 tablespoons miso paste (white or red)
Tofu
  • 1 cup firm tofu, cubed
Seaweed
  • ¼ cup dried wakame seaweed soaked and expanded
Green onions
  • 2 green onions finely chopped green onions

Method
 

  1. Soak wakame in warm water for 10 minutes until expanded.
  2. Bring broth to a simmer in a pot over medium heat.
  3. Mix miso paste with hot broth until smooth, then add back to the pot.
  4. Add tofu and soaked wakame; warm for 3-5 minutes.
  5. Stir in chopped green onions before serving.

Notes

Use low-sodium miso for a healthier option.
