  • 5 pounds potatoes scrubbed, peeled, and chopped into 1-inch pieces
  • water water enough to cover potatoes
  • 6 cups whole milk
  • 1.5 teaspoons kosher salt adjust to taste
  • 0.5 teaspoon freshly ground black pepper adjust to taste
  • 2 tablespoons butter optional

Method
 

  1. Place chopped potatoes in a pot, cover with water, and boil until fork-tender, about 15 minutes.
  2. Drain water and return the pot to the stove.
  3. Add milk and heat until steaming, about 10 minutes (do not boil).
  4. Season with salt and pepper, then stir in butter until melted.
  5. Remove from heat and serve warm.

Notes

For a creamier texture, blend part of the soup before serving.
