Method
- Heat olive oil in a large pot over medium heat. Add celery, onions, garlic, and carrots; sauté for 2-3 minutes.
- Add chicken, broth, salt, pepper, and thyme. Bring to a boil, stir in gnocchi, and cook for 3-4 minutes. Reduce heat and simmer for 10 minutes.
- Stir in half and half and spinach; cook for 1-2 minutes until spinach is tender. Adjust seasoning and serve.
Notes
For a richer flavor, use homemade chicken broth and fresh herbs.
