Meat
  • 1 lb ground beef or Italian sausage
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 28 oz can crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 bay leaf bay leaf
  • 8 oz lasagna noodles, broken into pieces
  • 2 cups ricotta cheese
  • 1.5 cups shredded mozzarella cheese
  • 0.5 cup grated Parmesan cheese
  • to taste Salt and pepper
  • optional Fresh basil for garnish

Method
 

  1. Cook ground meat in a large pot until browned.
  2. Add chopped onion and cook until softened; then stir in garlic.
  3. Pour in crushed tomatoes and broth; add herbs, season with salt and pepper, and bring to a boil.
  4. Add broken lasagna noodles and simmer until tender, about 10 minutes.
  5. Stir in ricotta, half of mozzarella and Parmesan cheeses; remove bay leaf, then serve topped with remaining cheese and basil if desired.
