- Peel and cut potatoes into 1½ inch chunks.
- In a large pot, add potatoes and vegetable stock; bring to a boil and simmer until tender (15–20 min).
- Lightly mash some potatoes for a thicker texture.
- Stir in butter and heavy cream; cook for 5 minutes on low heat.
- Season with salt and pepper, then serve hot with toppings.
Notes
